Sourdough Chocolate Chip Muffins

We love having baked goods on hand as a snack and what can be better than freshly baked muffins.  This recipe has a delicious nutty flavour, it’s fluffy and quick and easy to make.  Your household will love these!!  

This recipe will make 10 – 12 muffins.

Sourdough Chocolate Chip Muffins Recipe

Ingredients

  • 180gr (1 1/2 cups) all-purpose flour
  • 130gr (2/3 cups) granulated sugar
  • 10gr (1 tablespoon) baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 large egg at room temperature
  • 76gr (1/3 cup; 80ml) full cream milk
  • 1 teaspoon vanilla essence
  • 113gr (1/2 cup; 120 ml) oil
  • 120gr (1/2 cup) sourdough discard
  • 1 cup chocolate chips

Instructions

  1.  Prepare the oven to 220 degrees celcious.  Line muffin tin with paper liners or spray with non-stick spray.
  2. In a large bowl, mix the dry ingredients together.
  3. In a separate bowl, mix the wet ingredients together
  4. Mix the wet ingredients with the dry ingredients and stir with a spoon or rubber spatula until just combined.  The batter will be lumpy.  Do not over-mix or the muffins will become tough.
  5. Divide batter evenly between the muffin cups.
  6. Bake in a pre-headed oven for about 15 – 17 minutes.
  7. Serve and enjoy!
