Homemade Cream Cheese Recipe

This recipe is probably one of the easiest recipes we’ve ever attempted.  It is made at a fraction of the price sold in grocery stores!  It is creamy, delicious and preservative free!!  Since we’ve tried this recipe, we cannot stop with the cream cheese!!  Delicious as a dip, or a spread on a sandwich or even in food! 

This recipe will give you 170 grams of Cream Cheese

Cream Cheese Recipe

Ingredients

  • 1lt Full Cream Milk
  • 3 tablespoons lemon juice (you can also use lime juice or white vinegar)
  • 1/4 teaspoon salt

Instructions

  1. In a saucepan, bring your milk to a boil while stirring constantly.
  2. Once the milk is boiled, turn the heat down to medium and add your lemon juice 1 tablespoon at a time, 1 min apart.
  3. Continue cooking until the mixture curdles, while still stirring constantly.
  4. Once the mixture separates (there will be a yellowish liquid on the bottom and thick curdles on the top – his should happen in a few minutes), turn off the heat.
  5. Place a cheese cloth or a clean tea towel in a strainer and pour the mixture through the tea towel and strainer.
  6. Leave it like this until it is cooled – should take about 15 minutes.
  7. Once cooled, squeeze the remaining liquid from the tea towel and transfer the curd into a food processor
  8. In the food processor, process the curd until smooth and creamy (if it is still crumbly, add some of the discarded liquid or cream).
  9. Add salt to taste.  If you want, you can herbs at this point.
  10. Store in fridge and use within 7 days.
