Sourdough Pasta

Pastas is one of those meals that is just a staple in may households and ours is no different.  I’ve been playing with the idea to make my own sourdough pasta and finally tried it and it did not disappoint.  Again, like all the recipes on this website, it’s easy to make, delicious and filling – you don’t even need a pasta maker!   We are never going to buy pasta at the shop again! 

This recipe is enough for 4 – 6 servings.  If you have boys, like I have, I would suggest you double the recipe!

Sourdough Pasta Recipe

Ingredients

  • sourdough pasta ingredients300gr flour
  • 3 eggs
  • 40gr fresh sourdough discard

Instructions

  1. In a bowl, combine the eggs and sourdough discard.
  2. In your electric stand-up mixer (with the dough hook attachment), add the flour and the wet ingredients (eggs and sourdough discard).
  3. Mix until combined. 
  4. Once all the ingredients are nicely combined, knead it on medium speed for about 4 – 6 minutes.
  5. Set aside for about 1 hour.
  6. Divide the dough into 4 equal parts.  
  7. With your rolling pin, flatten each piece individually until long rectangle shaped and paper thin.
  8. Roll the rectangle piece up and cut in about 2cm strands.
  9. Bring a pot of water to a boil on the stove and place the pasta into the boiling water.
  10. Boil for 2 min at the most and remove from water.
  11. Serve with your favourite pasta sauce and enjoy! 
 

Note: You don’t need a stand-up mixer for this recipe.  You can combine and knead the dough with your hands.
